Dr Di Stefano, the lead researcher said, "Fruits and vegetables exert their protective effects through plant polyphenols, which are found in cocoa, olive oil, and apples …Olive oil-enriched chocolate was associated with significantly increased high-density lipoprotein ("good") cholesterol and decreased blood pressure compared to baseline.”

In terms of food qualities, Tibb medicine considers chocolate to be warm and moist. Olive oil from fully mature olives is hot and moist and olive oil from fresh olives is cold and dry.
